ABOUT LISA NICHOLS

Lisa Nichols grew up eating delicious homemade bread, so when she discovered that she felt much better without gluten, her quest for the perfect loaf began. She finally settled on a method of sprouting and fermenting whole grains, which produces optimal flavor and texture, while maximizing nutrition and digestibility. She has developed a complement of quick and easy gluten-free sprouted sourdough recipes.

Lisa has been passionate about the impact of nutrition for twenty years. She is presently the education, outreach, and tastings coordinator at the Brattleboro Food Coop. Her writing and recipes have been featured in Price-Pottenger Journal of Health and Healing. Previously, she served as Holistic Chef at a mental health retreat, where the residents really enjoyed making sourdough flapjacks, flatbreads, and apple pie. A flutist, Lisa believes that scrumptious real food supports peak performance.
