​​Are you looking for vegetarian meal ideas and creative ways to use tofu? Bill Collins, personal chef, cookbook author and Zoom cooking instructor, will demonstrate how to prepare a vegetarian Bahn Mi Sandwich and will share a handful of recipes, as well as more tips and advice about using tofu!

Chef Bill Collins is a graduate of the Cambridge School of Culinary Arts. He cooked at the old Ritz-Carlton in Boston after graduating and later worked at the handmade chocolate company Harbor Sweets in Salem, MA. He started his personal chef business in September 2001 and is the author of four cookbooks from Storey Publishing—Knife Skills, Making and Using Vinegar, How to Make Chocolate Candy, and Making Caramels

From 2012-2017, he appeared weekly on Mass Appeal, a daily lifestyle show on NBC channel 22 in Springfield. 

In addition to being a personal chef, Chef Bill teaches people how to cook. He does this in Zoom events, and in private homes, at parties, and at team-building events for companies. He consults with food businesses on recipe and menu creation. And, he’s currently providing free Zoom cooking classes every Wednesday and Friday at 5:00 EST.

For ten years (except when we’re having a pandemic), Bill has spent a week each summer teaching culinary basics to students at The Care Center, a school for young mothers in Holyoke. This collaboration has been coordinated by Reader-to-Reader, the amazing literacy non-profit in Amherst. Bill has worked on other projects as well with students and young parents from Holyoke, Springfield, and Navajo, NM. 

Bill has been raising money for the Dana Farber Cancer Institute as a rider in the Pan Mass Challenge, a large (huge!) two-day, 192-mile bike-a-thon held every August. He has raised over $150,000 in total, with 100% of all donations going to cancer research, and next year will be his 24th ride!

Bill and his wife have owned retired racing greyhounds for over 35 years. Chef Bill lives in Western Massachusetts with his wife Karen Dzendolet, an interior designer (, and their retired racing greyhound, Clementine.
