Baked Brie for Thanksgiving

As we approach the holiday season, our taste buds are heightened to sweet and spicy foods that aim to bring in the holiday warmth to every occasion. At River Valley Co-op, we've picked out several mouth-watering recipes that feature local products and bulk items. For this Thanksgiving, we've picked out a baked brie recipe that will make you crave for more!

This particular recipe features two local favorites: Harbison's Brie from Jasper Hill Farm from Greensboro Bend, VT and a savory local honey from Invisible Cities Apiary based in Amherst, MA. 

Jasper Hill is a working dairy farm with an on-site creamery in the Northeast Kingdom of Vermont. An underground aging facility maximizes the potential of cheeses made by the creamery, as well as those made by other local producers. Leftover whey from the cheesemaking process is fed to heritage breed pigs, roaming the woodlands beyond the cows' pasture.

Founded by Daniel Berry in 2012, Invisible Cities Apiary is a locally-oriented beekeeping operation based in the Massachusetts Pioneer Valley. They manage 100 honeybee colonies, producing raw seasonal honey, wax, propolis, and nucleus hives sold in the spring. Their beekeeping operation is treatment-free—meaning they forego the use of chemical treatments and antibiotics to maintain colony health. Instead, they opt for a more management-intensive beekeeping model (based on Kirk Webster's practices in Vermont) that relies on local queen-rearing, annual production of over-wintered nucleus colonies, and the use of Russian bees capable of coping with both long winters and common pests.

The dried fruit and pistachios are coated in a sweet drizzle of honey and placed on top of the melted brie to be served with bread and crackers.

Ingredients

  • 1 wheel of Brie
  • ¼ c Golden Raisins
  • ¼ c Dried Apricots
  • ½ c Dried Cranberries
  • ½ c Pistachios, lightly crushed
  • ¼ c Honey

 

Instructions

  1. Preheat oven to 350°F.
  2. Place brie on a baking sheet lined with a piece of parchment paper (just in case it leaks).
  3. When the oven reaches 350°F place brie in the oven and bake for 15 minutes.
  4. Combine dried fruit, pistachios, and honey in a small bowl.
  5. Remove from oven, top with the fruit, nuts, and honey, and serve with crackers.
